Processing of coffee beans in Mexico

Washed method

Coffee beans from Mexico are mostly wet processed. In the wet processing method, coffee beans are pulped after harvesting. This is to remove the outer cherry. The most notable thing about coffee processed with this method is that the beans are light and with a mild flavor. Usually, coffee beans are kept in water for at least forty eight hours. This is mainly done to allow the coffee beans to ferment. It is in the fermentation process where the coffee beans gain the fine flavor. You will note that this coffee has a bright and clean finish.

Dry processing method

It is one of the oldest ways of processing coffee. In this method, only the floating cherries are removed before drying. Coffee processed with this method is sweet and medium bodied.

Interesting facts about Mexican coffee

Arabica coffee is the main variety of coffee grown in Mexico. Usually, coffee beans in Mexico are harvested between March and October. In most cases, the beans are available around late April. Another notable fact about Mexican coffee is that coffees are either dry or wet processed.
